Move over blueberry cheesecake! These blueberry cheesecake swirl bars are going to be the new ultimate summertime dessert. Full of delicious summer flavours, these bars have a classic graham crust and a smooth and creamy cheesecake filling topped with beautiful swirls of blueberry sauce. When you're feeling extra decadent, take them to the next level with a big fat scoop of vanilla ice cream, and they'll be the highlight of your summer holiday!

With fall just around the corner, please tell me I’m not the only one that can not stop thinking about how short summer is? Sure, I love my pumpkin spice lattes just as much as the next girl, but I've come to realize that the length of summer is rather criminal. No amount of cinnamon sugar spice can cover that up. After August, it's back to school, and in a few short months, I'll get stuck in the dead of unforgiving Canadian winter.

Ew.
But, because it's still technically summer, I guess I shouldn't be thinking about how much snow I'll have to shovel this coming January and keep my focus on these out-of-the-world blueberry cheesecake swirl bars.

INGREDIENTS YOU NEED FOR THESE CHEESECAKE BARS
You only need a few ingredients to make these blueberry swirl cheesecake bars! The only equipment you need is a hand mixer, several bowls, and an 8-inch baking pan. Check the list below for the ingredients you need for this recipe!
Graham cracker crumbs - We're sticking to a basic graham cracker crust for this cheesecake because we want the flavour of the blueberries to sing. For the perfect crust, use a food processor or small blender to create fine crumbs. Alternatively, you can place the graham crackers in a large ziplock bag and use a rolling pin to crush the cookies.
Cream cheese - Please don't try and make this cheesecake without cream cheese. No cashews, tofu or vegan coconut Greek yogurt. Do yourself a favour and stick to regular full-fat cream cheese.
Butter - A little bit of butter is used for flavour and brings together the graham cracker crust!
Sugar - For the perfect amount of sweetness in every bite! White sugar will be used in the sauce, crust and filling for this recipe.
Eggs - Eggs give the cheesecake a moist crumb. Before baking, make sure the eggs are at room temperature for the best results. Room temperature eggs will incorporate better into the batter, which leads to less beating and prevents the flour from turning the cheesecake gummy.
Lemon extract, juice and zest - Lemon pairs so well with blueberry! The juice, zest and extract all add a little extra zing to the cheesecake.
Blueberries - Kind of self-explanatory, but in case you didn't figure it out, they're for the flavour and live up to the name of this recipe 😉.
